Distiller, Liqueur Maker, and Winemaker
You’ve reached distillation at Cazottes, father and son! Beware, stopping here means you may want to stay. And why not? The landscape of the Cordais plateau is stunning a gently rolling region offering a rich diversity of exposures and terroirs, close to Gaillac and Albi, where vineyards and orchards have flourished for millennia.
In Villeneuve-sur-Vère, the Distillery and Domaine Cazottes carry on the tradition of organic farming, inspired by biodynamic practices, with a deep respect for nature.
Focusing on the purest flavors of the estate's produce— grapes, fruits, flowers, grains, and plants—Laurent Cazottes elevates their very essence into his wines, spirits, liqueurs, and spirited delights. This is the fruit of titanic labor, entirely handmade, attracting gourmets and connoisseurs alike, from top chefs to fine drink enthusiasts.
This is Free Spirit.
Here, the goal is to capture the quintessence of each ingredient so that the final product retains only the authentic, pure fragrance and taste.
At the heart of many Cazottes specialties are the estate's vineyards, producing grapes that appear in the Folle Noire liqueur, the Mauzac or Prunelart drops. While Laurent Cazottes is best known for his magical eaux-de-vie and daring liqueurs, his talents extend beyond spirits.
In 2010, Laurent drew upon his family heritage to craft his first wine. His aim was to produce a simple wine using the region’s indigenous grape varieties, many of which had been abandoned by winemakers at the time. Varieties like Mauzac Rose and Alicante, which were nearly extinct, are now part of his production.
Since 2018, Joanna Dubrawska, who previously worked with COS in Sicily, oversees the winemaking process and leads the Maninalto project.
Today, the vineyard spans 4 hectares, producing 14,500 bottles annually, distributed across 11 countries.
« Grapes may seem ordinary, but they are among the most complex fruits, deeply tied to human history. They are a vital link in our ecosystem, fitting into the farm’s broader project. They are crucial for our eaux-de-vie (Fine de Jurançon Noir, Mauzac Rose), our liqueurs, and, of course, our wines, which we strive to make as vibrant as possible. »

The estate’s focus is on fruit, with 600 Williams pear trees, 200 Reine-Claude plum trees, and 4 hectares of vineyards featuring Mauzac Rose, Prunelart, Duras, and Folle Noire.
Adding to this diversity are 1,300 Périgord black truffle oaks, 500 saffron bulbs, heirloom tomatoes, bread grains like petit épeautre, barley, black oats, aromatic plants, and more—all cultivated within a timeless, traditional, polycultural ecosystem.
